Brown Butter Pecan Cookies
Ingredients:
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1/2 cup toasted pecan halves for topping
Instructions:
Preheat the oven to 350F 175C and line baking sheets with parchment paper
In a saucepan, melt the butter over medium heat
Continue cooking, stirring frequently, until the butter turns a golden brown color and has a nutty aroma
Remove from heat and let cool slightly
In a mixing bowl, combine the browned butter, granulated sugar, and brown sugar
Mix until well combined
Add the eggs and vanilla extract to the butter-sugar mixture
Beat until the mixture is smooth and creamy
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chopped pecans
Using a cookie scoop or spoon, drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart
Gently press a toasted pecan half onto the top of each cookie dough mound
Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden brown
Remove the baking sheets from the oven and allow the cookies to cool on the sheets for a few minutes before transferring them to a wire rack to cool completely
