Lentil Mushroom Olive Burgers
Ingredients:
- 1 cup cooked lentils
- 1 cup mushrooms, finely chopped
- 1/2 cup black olives, chopped
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil for cooking
- Gluten-free burger buns
- Your favorite vegan burger toppings lettuce, tomato, avocado, vegan mayo, etc
Instructions:
In a large mixing bowl, combine the cooked lentils, finely chopped mushrooms, chopped black olives, gluten-free breadcrumbs, finely chopped onion, minced garlic, dried oregano, paprika, salt, and pepper
Use a potato masher or fork to mash and mix the ingredients until well combined
You want the mixture to hold together, so adjust breadcrumbs or lentils as needed
Form the mixture into burger patties
You should get about 4 patties from this mixture
Heat olive oil in a skillet over medium heat
Cook the lentil mushroom olive burgers for about 4-5 minutes on each side or until they are golden brown and heated through
Toast your gluten-free burger buns in the same skillet or in a toaster until they are lightly crispy
Assemble your lentil mushroom olive burgers on the toasted buns with your favorite vegan burger toppings
