Spicy Ginger Cucumber Salad

This Spicy Ginger Cucumber Salad is a zesty and cool dish that gets its heat from red pepper flakes. It goes well with any meal because it has fresh cucumbers, ginger, and a sour dressing.

Ingredients:

  • 2 large cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 teaspoons grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 2 green onions, thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon toasted sesame seeds

Instructions:

In a large bowl, combine the sliced cucumbers and sliced green onions

In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, grated ginger, minced garlic, and red pepper flakes

Pour the dressing over the cucumbers and toss to coat

Cover and refrigerate the salad for at least 30 minutes to let the flavors meld

Before serving, sprinkle with chopped cilantro and toasted sesame seeds

Serve chilled and enjoy
