Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light-brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped cashews
- 1/2 cup caramel bits
Instructions:
Preheat your oven to 350F 175C
In a large bowl, cream together the softened butter, granulated sugar, and light-brown sugar until light and fluffy
Beat in the eggs, one at a time, then stir in the vanilla extract
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chopped cashews and caramel bits
Drop spoonfuls of cookie dough onto baking sheets, leaving enough space between each cookie
Bake in the preheated oven for 10-12 minutes or until the edges are golden
