Apricot-Lavender Sorbet
A refreshing and aromatic sorbet that combines the sweetness of ripe apricots with the delicate floral notes of lavender. Perfect for a light and sophisticated dessert.
Ingredients:
- 500g ripe apricots, pitted and chopped
- 1 cup water
- 1/2 cup granulated sugar
- 2 tablespoons fresh lavender flowers or 1 tablespoon dried
Instructions:
Put water, sugar, and lavender flowers in a saucepan and mix them together
Over medium heat, bring to a simmer and stir until the sugar is gone
Take it off the heat and let it sit for 15 to 20 minutes
Strain the syrup that has lavender in it into a blender
Put in the chopped apricots and blend until its smooth
Put the mixture into an ice cream maker and churn it according to the machines directions until its the consistency of sorbet
Put the sorbet in a container and freeze it for at least four hours, or until it gets hard
If you want, you can serve scoops of apricot-lavender sorbet with fresh lavender flowers on top
