Chicken Sausage Jambalaya

A flavorful one-pan dish with chicken sausage, rice, and vegetables cooked in Cajun spices, perfect for a comforting meal.

Ingredients:

  • 1 cup long-grain white rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 celery stalk, chopped
  • 8 oz chicken sausage, sliced
  • 1 can 14
  • 5 oz diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions, chopped for garnish

Instructions:

Heat the olive oil in a big skillet over medium heat

Add the celery, bell pepper, onion, and garlic

Simmer the veggies for 5 minutes or until they are tender

Cook the chicken sausage slices until they get browned

Add the rice, chopped tomatoes, chicken broth, salt, pepper, and Cajun seasoning

After bringing to a boil, turn down the heat

After the rice is cooked and the liquid has been absorbed, cover and simmer for 20 to 25 minutes

Using a fork, fluff the jambalaya and serve it with chopped green onions on top
