Perfect Pesto Pasta
Pesto pasta is a traditional Italian dish that tastes great with garlic, pine nuts, fresh basil, and Parmesan cheese. This recipe makes a pesto sauce that is perfectly balanced and full of flavor. It goes well with pasta.
Ingredients:
- 8 ounces pasta
- 2 cups fresh basil leaves, packed
- 1/2 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
Follow the directions on the package to cook the pasta until it is al dente
Save 1/2 cup of the pasta water, and then drain the pasta
Put basil leaves, Parmesan cheese, pine nuts, and garlic in a food processor and blend them together
Pulse until the food is very small
Slowly pour the olive oil into the food processor while its running until the mixture is smooth and well mixed
Add pepper and salt to taste
If needed, add the pasta water that was saved to change the consistency
Add the cooked pasta to the pesto sauce and toss it around until its well covered
Serve right away, and if you want, top with more Parmesan cheese and basil leaves
