Lentil Chickpea Radish Salad
A refreshing and nutritious salad featuring the earthy flavors of lentils, the protein-packed goodness of chickpeas, and the crispness of radishes. Tossed with a zesty balsamic vinaigrette and topped with feta cheese, this salad is a delightful combination of textures and tastes.
Ingredients:
- 1 cup lentils, cooked
- 1 cup chickpeas, cooked
- 1 cup radishes, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions:
Chopped red onion, chopped parsley, sliced radishes, cooked lentils, and chickpeas should all be combined in a big bowl
To make the dressing, combine the olive oil and balsamic vinegar in a small bowl
After adding the dressing to the salad, gently toss to coat all of the ingredients
Add some crumbled feta cheese to the salad and gently toss once more
To taste, add salt and pepper for seasoning
To let the flavors combine, place the salad in the refrigerator for a minimum of half an hour before serving
Enjoy and serve cold
