Slow Cooker Zucchini and Tomato Pasta Sauce
Making a hearty pasta dish with this slow cooker zucchini and tomato sauce is easy and tastes great. Because it is cooked slowly, the flavors get to work together beautifully, making a tasty sauce that goes well with your favorite pasta.
Ingredients:
- 2 large zucchinis, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 can 28 ounces crushed tomatoes
- 1 can 14 ounces diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces pasta of choice, cooked
- Grated Parmesan cheese, for serving
Instructions:
In a slow cooker, combine diced zucchinis, diced onion, minced garlic, crushed tomatoes, diced tomatoes, olive oil, basil, oregano, salt, and black pepper
Stir well to combine all ingredients
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until zucchinis are tender and flavors have melded together
Once cooked, serve the sauce over cooked pasta
Sprinkle with grated Parmesan cheese before serving
