Spiced Sweet Potato Hummus
Ingredients:
- 2 medium sweet potatoes, peeled and cubed
- 1 can 15 ounces chickpeas, drained and rinsed
- 3 cloves garlic, minced
- 3 tablespoons tahini
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Water as needed for desired consistency
Instructions:
Preheat your oven to 400F 200C
Place the sweet potato cubes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper
Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized
In a food processor, combine the roasted sweet potatoes, chickpeas, minced garlic, tahini, lemon juice, ground cumin, ground coriander, smoked paprika, and a pinch of salt and pepper
Blend until the mixture is smooth, adding water as needed to achieve your desired hummus consistency
Taste and adjust the seasonings as necessary, adding more salt, pepper, or lemon juice if desired
Transfer the spiced sweet potato hummus to a serving bowl, drizzle with a little olive oil, and garnish with additional smoked paprika and fresh herbs if desired
Serve with pita bread, crackers, or vegetable sticks
