Delicious Tortellini with Pesto and Roasted Vegetables
Tortellini that is soft, bright basil pesto, and tasty roasted vegetables make up this delicious dish. It has the right amount of each texture and flavor to satisfy your pasta cravings
Ingredients:
- 1 package of tortellini
- 1 cup of basil pesto
- 2 cups of mixed roasted vegetables such as bell peppers, zucchini, and cherry tomatoes
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
Toss the mixed vegetables with olive oil, salt, and pepper on a baking sheet
Roast the vegetables for 20-25 minutes or until they are tender and slightly caramelized
Meanwhile, cook the tortellini according to the package instructions
Drain and set aside
In a large skillet, heat the basil pesto over medium heat
Add the cooked tortellini to the skillet and toss to coat evenly with the pesto
Gently fold in the roasted vegetables
Sprinkle with grated Parmesan cheese and serve hot
